Recipes.

Hey bloggy friends! Sorry for my lack of posts the past couple days...I took a quick hiatus due to lack of motivation, but I am back. :) Babydaddy and I have been having fun with some new (and not so new) recipes and have been trying our hand at meal planning; we're hoping it'll help our grocery bill as well as out waistlines. :)

On Saturday I made my "famous" rotisserie chicken...the kids and Babydaddy seem to love this dish and its easy-peasy! Sorry for my chicken scratch...

The finished product...we used thighs, but a whole chicken can be used at well...

Today's dinner was another of those salad beasts...here's the chicken on the skillet...
Our favorite Salad Toppings and homemade dressing...this dressing is DA BOMB seriously:
1 clove crushed and very finely minced garlic
1/2 tsp oregano, ground in hand (or not)
1/4 tsp salt
1/4 tsp pepper
Juice from 1 lemon juice
½ cup olive oil
¼ cup honey
2 tablespoon yellow mustard
Splash of red wine or balsamic vinegar
Place all ingredients in a small jar and shake well until emulsified.
The finished product. :) Sooooo good, light and filling!
I'm looking forward to another week in the gym...last week energized me and got me motivated for more. :)
